So today I woke up in the pancake mood (as you do ;) ) and I decided to make a quick batch of fancy American style ones. Now... I have to put my hands up and say I'm not the best cook. Like my mum always says its a cyclone in the kitchen after I've been in it, and I'm not gonna lie I hate the washing up! Saying that, I pretty much used a mismatch of recipes with my own spin on it. In the end it became a cinamony' coconutty' pancake pile of goodness, and what beats a Saturday morning wake up to a waft of cinnamon eh?
After rummaging through my cupboards I realised I didn't have fancy chocolate sauce or strawberries to garnish so I settled with a peanut butter and banana side with the drizzle of honey all over. For all you people sitting on your screens wishing you had smell-o-vision fear not as I am about to list the recipe in its mismatched glory then we can all rejoice with the smell of cinnamon goodness.
THE MISMATCHED PANCAKE RECIPE :
1 cup self-raising flour
1 cup milk ( any kind )
1 egg
sugar ( to taste )
1 teaspoon of cinnamon
1 tablespoon of dessicated coconut ( optional )
The recipe I used made about 8 small pancakes and they came out fluffy and soft. Make sure you mix all the ingredients with your desired utensils ( perhaps a whisk ) and beat all the floury lumps out to give you smooth pancakes. Have a taste to see whether the sugar level is enough, then begin the cooking. Make sure you use a non-stick pan because you don't want those babies to be sticking! Wait till the bubbles appear on the surface until you flip them over ( should be about a minute ).
